Chef Emmanuel David prepared this Bone-in short rib as part of a contest put on by Sterling Silver Premium Meats. “The Art Of Beef Kit” provided by Sterling Silver included a specific cut of meat to be used in a meal preparation. The contest provides a unique opportunity for culinary professionals to explore and share ideas as they showcase their skills.
Chef Emmanuel David took to this opportunity and began his process by unpackaging the Sterling Silver Short rib. He began by seasoning the cut of meat with a Boulevard special blend of herbs and spices. The meat was then seared before braising for eight hours to enhance the flavour and tenderness.
Once complete, Chef Emmanuel Davids bone-in short rib, braised for eight hours with a spiced herb crust, was plated with Parisian potatoes, icicle radishes, and carrots over a broccoli pure and finished with a demi-glaze. See images of the finished meal below!
